One Sheet Pan Shrimp Fajitas

I asked so you shall receive! My best friend and her fiance came into town this past weekend to visit and and go to the Avett Brothers concert. This was my 4th time seeing them! If you haven’t checked them out please do. Life. Changer.

Since our friends were coming into town on Friday night I wanted to make this an opportunity for another recipe to share with all of you.  Jena and Brian dietarily choose to eat for the very large majority only seafood/fish for their meat consumption. So I wanted you to choose what I should make!

Shrimp Fajitas!!

 These one pan shrimp fajitas are an easy go to diner and small cleanup with only using one pan!

Start by throwing the shrimp in luke warm water to defrost if they aren’t already defrosted.

Cut the peppers and red onion thinly. I can’t stress that enough, I wish I would have taken a little more time to cut the peppers a little bit more thin so they could break down and get all of the delicious seasonings. Unfortunately, I was a little pinched on time…

Best thing about raw shrimp when you are cooking is that they don’t dry out. Worst thing about raw shrimp is de-shelling them.  I can’t find raw shrimp anywhere that I don’t have to de-shell! That’s ok though, this is what husbands are for 🙂 . Once they are de-shelled and the tails are taken off of them throw them in the bowl with the peppers and onions.

Mix together peppers, onions, shrimp, olive oil and spices in the same bowl you have already added everything else to.  I recommend to just use your hands and mix everything.  Throw them onto a sheet pan and put them in a preheated oven at 450 degrees for 8 minutes. Then switch to broil for 2 minutes.

This dish had so much color and fragrance when they came out of the oven. Squeeze some fresh lime over the fajita amazingness and scoop it up in a warm tortilla.

Whats great about this dish is that every fajita that you make you can make differently! Top fajita is a creation of Jena and the bottom creation was made by me 🙂 Put the toppings in front of your family and guests and let them have at it.

INGREDIENTS:
YIELD 6-8 servings

2 Pounds of raw shrimp
1 yellow bell pepper, sliced this
1 red bell pepper, sliced this
1 orange bell pepper, sliced this
1 small red onion, sliced thin
1 1/2 tablespoons of extra virgins olive oil
1 teaspoon of salt
several turns of black pepper
2 teaspoons of Chili Powder
1 teaspoon of Garlic Salt
1/2 teaspoon of garlic powder
1/2 teaspoon of onion powder
Tortillas

DIRECTIONS:

  1. Preheat oven to 450 degrees.
  2. In a large bowl, combine sliced onion, sliced bell peppers, shrimp, olive oil, salt and pepper and spices.
  3. Toss to combine.
  4. Spread shrimp, bell peppers and onions on baking sheet.
  5. Cook at 450 degrees for about 8 minutes. Then turn oven to broil and cook for additional 2 minutes or until shrimp is cooked through.
  6. Squeeze juice from fresh lime over fajita mixture
  7. Serve in warm tortillas
